Wine Loop The World of Wines Wine is bottled poetry, so much a part of culture and entertaining
The question is which wine?
Think of merlot, Sauvignon Blanc, Mourvèdre: to some a mystical calling, to others just a mystery. The world of wines is a joy, so much a part of culture and entertaining. The question is which wine? Shiraz from Australia, bold, fruitful, full of irreverence, or Syrah from the Rhone, soft, full, with mystical layers of flavour.
Our house wines are subtle and were purchased for their constant availability, flavour and cost. en Ville can marry wines to foods and budgets. Our pairings for haute cuisine are on the leading, or should I say, drinking edge of the world of wine.
A common misconception is that a wine should be bolder than the food it supports. The key word is support. Let your wine selection be the foundation of the match. With duck as a roast or a confit, there is a high degree of fat and strong flavours. It is these flavours that we want to support, ideally, with a light bodied Pinot Noir from perhaps Phalz or Loire or Alsace. If we married the duck to a fiery Shiraz, the flavour of the duck diminishes to the spice of the Shiraz - not a pretty thing!
Reception Whites are undergoing a fashion change. At last we are moving from the over oaked tannic Chardonnays to Pinot Grigio instead. The Italians are happy and so am I! Perhaps this will extend to Pinto Gris from Alsace, the same grape with a French expression.
